Hah I think I fixed it. While recreating a serpate project for you, I noticed it worked fine in that project with the same files and same packages.
So I deleted every spine related folder from my project and reimported everything again.
And now it works fine π
Maybe Unity didn't update everything as it should.
But since I reimported it about a thousend times I'm sure I was using the right package.

To be honest I got another error in the log since the upgrade, which apears about 80 times at every start of game:
